Wisconsin farmers are now sending surplus vegetables—in canned form—to the Second Harvest Foodbank of Southern Wisconsin, preventing tons and tons of nutrient-rich vegetables from going to waste.  Jed Colquhoun, an associate professor of horticulture, helped work out the logistics of the arrangement.
