Buege Receives American Meat Science Assn. Signal Service Award

Dennis R. Buege, professor and Extension meat scientist at the University of Wisconsin-Madison, received the 2003 American Meat Science Association Signal Service Award June 18 at the 56th Annual Reciprocal Meat Conference in Columbia, Mo. The award, which recognizes devoted service and lasting contributions to the meat industry and to the association, was sponsored by Central Soya Company, Fort Wayne, Ind.

Buege received his undergraduate degree in meat and animal science from the UW-Madison in 1967, his master”s degree from Cornell University in 1969, and his Ph.D. from the UW-Madison in 1975. He worked in research and development for Geo. A. Hormel and Company from 1975 to 1977, and then joined the faculty of the UW-Madison as an Extension meat specialist, becoming a full professor in 1987.

Buege’s research interests focus on processing and safety of meat products, nutrient composition of meat products, reduced fat meat products, and characteristics of beef from Holstein steers. His Extension education programs assist meat processors, home economists, dieticians, and other food-related specialists.

Buege is a member of the American Meat Science Association, American Society of Animal Science, Institute of Food Technologists, Wisconsin Association of Meat Processors, and the American Association of Meat Processors.

The American Meat Science Association professional society was formally incorporated in 1964. Its unique role is to provide the forum for all interests in meat-commercial, academic, government, and consumer-to come together in a reasoned, scientifically based atmosphere to address the needs of the processing and marketing segments of industry, the consuming public, its own members, and others in the biological and nutritional sciences.
