How are gummy bears made? In this episode of Blue Sky Science, food science professor Rich Hartel, who runs an annual “Candy School” for confectionery professionals, answered that sticky question posed by Kai Sampson.
Blue Sky Science is a collaboration of the Wisconsin State Journal and the Morgridge Institute for Research. Scientific questions are posed by visitors to Science Saturdays, a monthly series at the Discovery Building that features interactive exploration stations centered around a particular topic.
